Rice comes in many different forms and the list below is not exhaustive (see also the "trade names/synonyms" category): (1) Paddy - rough rice; rice where husk is not removed (2) White rice - also known as polished rice which is rice in its most refined form (3) Brown rice - also known as rough rice, that is rice after husk is removed. (4) Parboiled bran - rice with oil content of about 23 per cent. (5) White rice bran - rice with oil content of about 15 per cent. Note the colour varies for this type of rice and is no indication of damage. Bran damaged by heat will have a distinctive "cooked" odour. (6) Rice dust or boussir is chaff and waste of rice shipped in bags and used normally as animal feed. Tendency to heat.
